Saika Kengata Yanagi by Itsuo Doi 11.7" (30cm) - Right - The Suisin Saika was originally a collaboration line between the famous blacksmith master Kenjiro Doi and his son Itsuo Doi. As of 2013, Master Kenjiro Doi has officially retired and has passed on his legacy to his son. The Suisin Saika is now crafted by Itsuo Doi using the same techniques to craft the original Saika line.The kengata yanagi is forged to look like a Japanese sword. It is used to slice boneless fish fillets into sashimi and toppings for sushi. The graceful, thin blade cuts beautiful slices in one long, drawing stroke. Originated in Kansai (Osaka) region.
