Product Description

Suisin Saika Sakimaru Takobiki by Itsuo Doi 11.7" (30cm) - Right - The Suisin Saika was originally a collaboration line between the famous blacksmith master Kenjiro Doi and his son Itsuo Doi. As of 2013, Master Kenjiro Doi has officially retired and has passed on his legacy to his son. The Suisin Saika is now crafted by Itsuo Doi using the same techniques to craft the original Saika line. The takobiki is a variation of the yanagi and is used to slice straight-cut sashimi. It's thin body makes cutting thin slices of fish easier than the yanagi. The rounded tip and balanced weight works well on difficult ingredients such as octopus, from which it gets its name. Originated in Kanto (Tokyo) region.
